RECIPE: Baked Spinach Chips (Low Carb)

Giving up salty fried snacks like tortilla and potato chips can be hassle. If only there was an alternative that was equally as delicious and satisfying. We’ve got you. Here’s a low-carb, low-calorie, and totally yummy recipe to satisfy those cravings! The best part? It’s just 3 grams of carbs per serving.

Baked Spinach Chips (Low Carb)

Serves 1. Ready in 15 minutes.
Only 3 carbs per serving. 

IMG_2426Ingredients:

  • 2 cups of spinach
  • 1 tablespoon of olive oil
  • Salt
  • Pepper
  • Optional: Other seasonings like Garlic Powder or Parmesan Cheese

You can use spinach from a bag or fresh from the market. Both baby spinach and regular spinach work fine, but I prefer the larger leaves on regular spinach. They’re easier to take off the pan and tend to cook more evenly!

Instructions:

  1. IMG_2421Preheat the oven to 350 degrees.
  2. Line a baking sheet with parchment paper or simply spray it with a non-stick spray like Pam.
  3. In a bowl, coat the spinach leaves with the olive oil. A little oil goes a long way-don’t soak them!
  4. Lay the leaves down on the baking sheet and season with salt, pepper, and any other seasonings as desired.
  5. Bake for 10 minutes. They will shrivel up during the process, which is normal.
  6. Cool the chips for a few minutes to allow them to crisp up. Then, remove them from the pan and serve!

And there you have it! A light, tasty snack perfect for those mid-afternoon cravings!
