Cauliflower Mash: fluffy, creamy, delicious, and practically carb-free. Tastes so close to the real thing, you'll never miss mashed potatoes again! In fact, there's a good chance you'll like this low-carb alternative even more.
Ingredients
1 head cauliflower
2 tbsp plant-based butter
2 tbsp dairy-free cream cheese
3 tbsp nutritional yeast
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp Italian seasoning
¼ tsp sea salt
½ tsp black pepper
Directions
Place a medium pot of water on the stove to boil. Rinse the cauliflower thoroughly and chop into one-inch pieces.
Add cauliflower into a steamer basket over the boiling water, or place directly into boiling water. Cook until tender, which is approximately 25 minutes.
Strain the cauliflower. Then add to a large mixing bowl or to the bowl of your food processor (optional). Add the remaining ingredients
Mash ingredients together with a potato masher or fork, or pulse in the food processor until well combined. Serve.
Recipe Note
- This recipe can also be made in a blender for a lighter, more whipped texture.
- Swap the plant-based butter for olive oil and the non-dairy cream cheese for non-dairy plain yogurt to decrease the amount of saturated fat.
