Watermelon Salad with Feta and Cucumber
Prep time: 15 minutes

Saturated Fat: 3g
1 mini watermelon, or 4 cups, cubed
2 mini cucumbers, chopped
2 oz feta cheese, crumbled
1 lemon, juiced
4 basil leaves
3 tbsp extra virgin olive oil
¼ tsp sea salt
In a large serving bowl, add the watermelon, cucumbers, and basil.
Pour the lemon juice over the salad, drizzle the extra virgin olive oil, and season with sea salt.
Mix to combine.
Sprinkle feta over the salad and toss again.
Taste and add more seasoning, if desired.
Serve and enjoy.
