Peach Lime Salsa
This low-carb, heart healthy, and gluten-free salsa recipe is a unique—and nutritious—take on a south of the border classic. It brings together the robust sweetness of peach, zest of jalapeño, and the balancing citrus of lime.
2 medium peaches, pitted and diced
1 medium red onion, finely diced
1 medium tomato, diced
1 red bell pepper, diced
1 tbsp extra virgin olive oil
1 medium jalapeño, seeded and finely chopped
1 tsp grated lime zest
2 tbsp lime juice
½ cup cilantro or parsley, chopped (optional)
¼ tsp salt
Wash and prepare all produce.
