This is such a delicious and nourishing sauce because of its simplicity and versatility.
My usual go-to dressing is extra virgin olive oil and balsamic vinegar. But with this additional time on my hands, I can take 5 minutes to whip up a homemade sauce! And this one does not disappoint.
Green tahini has the nuttiness you’d expect from a tahini sauce, it’s bursting with an irresistible fresh herb flavor, and it goes with everything.
You can use just about any fresh herbs you happen to have handy, with a single herb or a combination of several. This particular recipe is what I happened to have in my kitchen at the moment (I’m a week and a half into no grocery runs!) -- not only is the taste top-notch, but it also has some great immunity properties.
In particular, it's a great way to add garlic (which is anti-viral), lemon (which is anti-inflammatory), and fresh herbs to your day!
Other herbs you could include? Cilantro, mint, basil, and chives, to name a few. Just about any green herb you have will do!
This sauce is perfect simply as a dip for your steamed, roasted, or sautéed vegetables (of any kind), or as a creamy dressing for your salad. It’s also a wonderful sauce for seafood, chicken, and pork, especially when grilled or roasted.
Drizzle over whatever else you can think of!
It’s ready in no time (5 minutes, tops) and, best of all, it’s positively, perfectly low carb. In fact, I consider this no-carb -- I don’t give myself any additional insulin for this green tahini sauce.
Ingredients
- 1/2 cup tahini
- 1/2 cup water
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon
- 3 garlic cloves
- 1/2 teaspoon salt
- 1 green onion
- A handful of dill, parsley, and any other green herbs
Instructions
Toss all in a blender or food processor and pulse until you get a smooth, finely minced and well-blended consistency! It should take roughly 3 to 4 minutes.
